Recipe Card: Energy Bites

If there was one go-to snack I always have in hand, these energy bits are it. They are easy to make, fill me up, and taste great. They are perfect for breakfast or a pre-run pick me up! I usually make a batch on Sunday and eat on them all week.

Energy Bites

1C dry oatmeal

2/3C toasted coconut flakes

1/2C peanut butter

1/2C ground flaxseed or wheat germ

1/2C chocolate chips or dried cranberries or dried cherries (I like to mix the chocolate and dried fruit)

1/3C honey or maple syrup

1t vanilla extract

Stir all ingredients together in medium bowl. Let chill in fridge for about 30 minutes. Once chilled, roll into balls (any size is fine–mine are about like a golf ball). Store in an airtight container.
