It’s very rare for my cooking to garner a compliment from my meat-and-potato husband. So when I pulled of a “that’s really good” for a turkey sandwich, I knew I was on to something!
This is one of the easier weeknight recipes I have, which is even better! Plus, you can make it with any combo of meat or cheese, so it’s pretty versatile as well.
Turkey Pesto Sliders
1 package King’s Hawaiian rolls
1/2 pound turkey (I like Cajun for some spice but any will do)
1/4 C pesto (I like homemade from here)
4 slices of cheese (I like mozzarella herb but you choose)
2T butter
Italian seasoning to taste
Heat oven to 350 degrees. Slice rolls in half, but do not break apart. On the bottom half of bread, place cheese. On the top half, spread pesto. Place turkey on top of the cheese and cover with the pesto bread. Melt butter and add Italian seasoning. Brush over the top of the sliders. Bake about 10 minutes.
